2 medium zucchinis, grated

1 cup fresh sweet corn kernels (or frozen, thawed)

1/2 cup all-purpose flour

1/4 cup cornmeal

2 large eggs

1/4 cup grated Parmesan cheese

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

1/2 teaspoon paprika

Prepare the Zucchini: Begin by grating the zucchinis using a box grater. Place the grated zucchini in a clean kitchen towel or cheesecloth and squeeze out excess moisture. This step is crucial as it prevents the fritters from becoming soggy.

    Mix the Base: In a large mixing bowl, combine the grated zucchini, sweet corn, flour, cornmeal, eggs, Parmesan cheese, green onions, garlic powder, onion powder, paprika, and a pinch of salt and pepper. Mix until all ingredients are well incorporated.

      Heat the Oil: In a large non-stick skillet, heat about 2 tablespoons of olive oil over medium heat. Adjust the oil quantity based on your skillet size, making sure to cover the bottom of the pan.
