Ingredients

4 medium-sized zucchinis

1 cup fresh basil leaves

1/2 cup grated Parmesan cheese

1/3 cup pine nuts (toasted)

2 garlic cloves

1/2 cup extra-virgin olive oil

Juice of 1 lemon

Salt and pepper to taste

Cherry tomatoes (optional, for garnish)

Pinch of red pepper flakes (optional, for added heat)

Instructions

Prepare the Zucchini Noodles:

    - Rinse the zucchinis under cold water. Use a spiralizer or vegetable peeler to cut the zucchinis into noodles. Place them in a colander and sprinkle with a little salt. Let them sit for about 10 minutes to draw out excess moisture.

      Make the Pesto Sauce:

        - In a food processor, add the fresh basil, Parmesan cheese, toasted pine nuts, garlic cloves, lemon juice, salt, and pepper. Pulse until combined.

          - While the food processor is running, slowly drizzle in the olive oil until the mixture is creamy and smooth. Taste and adjust seasoning as needed. If you prefer a bit of heat, add the red pepper flakes at this stage.

            Cook the Zucchini Noodles:

              - Heat a non-stick skillet over medium heat. Add the zucchini noodles to the pan and sauté for about 2-3 minutes, just until they are heated through but still al dente. Be careful not to overcook them, as they can become mushy.

                Combine:

                  - Remove the skillet from heat and toss the sautéed zucchini noodles with the basil pesto until the noodles are well-coated.

                    Serve:

                      - Divide the zoodles into serving bowls, garnishing with halved cherry tomatoes for a pop of color and additional flavor if desired. Finish with an extra sprinkle of Parmesan cheese and a drizzle of olive oil if you like.
