Zucchini Lasagna Rolls

3 medium zucchinis, sliced lengthwise into thin sheets

1 cup ricotta cheese

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

1 egg

2 cups spinach, fresh or sautéed

2 cloves garlic, minced

1 jar (24 oz) marinara sauce

1 tsp dried Italian seasoning

Salt and pepper, to taste

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Prepare Zucchini: Lay the zucchini slices on paper towels and sprinkle with salt to help remove moisture. Let them sit for about 20 minutes, then pat dry with additional paper towels.

      Make the Filling: In a medium bowl, combine the ricotta cheese, half of the mozzarella cheese, Parmesan cheese, egg, spinach, minced garlic, Italian seasoning, salt, and pepper. Mix until well combined.

        Assemble the Rolls: Spread a small amount of marinara sauce at the bottom of a 9x13 inch baking dish. Take one zucchini slice, place a generous tablespoon of the cheese filling at one end, and roll it up tightly. Place the roll seam-side down in the baking dish. Repeat with remaining zucchini slices and filling.

          Add Sauce: Once all rolls are in the dish, top them generously with the remaining marinara sauce, covering the rolls evenly. Sprinkle the rest of the mozzarella cheese on top.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15 minutes or until the cheese is bubbly and golden.

              Cool and Serve: Allow the lasagna rolls to cool for about 5 minutes before serving. Garnish with fresh basil leaves if desired.
