Zucchini Crust Breakfast Pizza

2 medium zucchinis, grated

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 large egg, beaten

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Salt and pepper to taste

1/2 cup cherry tomatoes, halved

4 large eggs (for topping)

1/4 cup cooked and crumbled breakfast sausage (optional)

Fresh basil leaves for garnish

Olive oil for drizzling

Prepare Zucchini: Preheat your oven to 425°F (220°C). In a colander, place the grated zucchini, sprinkle with salt, and let it sit for about 10-15 minutes to draw out excess moisture. Afterward, use a clean kitchen towel to squeeze out any remaining moisture.

    Make the Crust: In a mixing bowl, combine the drained zucchini, mozzarella cheese, Parmesan cheese, beaten egg, garlic powder, Italian seasoning, and a pinch of salt and pepper. Mix thoroughly until well-combined.

      Shape the Crust: Line a baking sheet with parchment paper. Transfer the zucchini mixture to the sheet and press it down into a round or rectangular shape, about 1/4 inch thick. Make sure the edges are slightly raised to hold toppings.

        Pre-Bake the Crust: Bake in the preheated oven for 15-20 minutes or until the crust is golden brown and firm to the touch.

          Add Toppings: Remove the crust from the oven. Scatter cherry tomato halves and crumbled sausage (if using) evenly over the crust.

            Crack Eggs on Top: Carefully crack the four large eggs over the top of the pizza, taking care to spread them out evenly.
