2 medium zucchinis, grated and excess moisture squeezed out

1 cup sharp cheddar cheese, grated

4 large eggs

1/2 cup milk (or milk alternative)

1/2 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon paprika (optional, for a little heat)

1/4 cup green onions, finely chopped

1/4 cup cherry tomatoes, halved (for garnish)

Cooking spray or olive oil for greasing the baking dish

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease an 8x8 inch baking dish with cooking spray or olive oil.

    Prepare the Zucchini: Start by grating the zucchinis using a box grater or food processor. After grating, place the zucchini in a clean kitchen towel and twist to squeeze out any excess moisture. This step is crucial to prevent a soggy bake.

      Mix Wet Ingredients: In a large mixing bowl, whisk together the eggs and milk until well combined.

        Add Dry Ingredients: Add the flour, baking powder, garlic powder, onion powder, salt, black pepper, and paprika to the egg mixture. Stir until just combined.
