2 medium zucchinis, grated (about 2 cups)

1 cup whole wheat flour

1/2 cup brown sugar, packed

1/2 cup vegetable oil

3 large eggs

1 cup chopped walnuts (optional)

12 oz. pasta (your choice: spaghetti, linguine, or penne)

1/4 cup fresh basil, chopped

Salt and freshly ground black pepper, to taste

Preheat the oven: Begin by preheating your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.

    Prepare the zucchini: Grate the zucchinis using a box grater or food processor. Place them in a clean towel and squeeze out excess moisture. Set aside.

      Mix dry ingredients: In a large bowl, combine the all-purpose flour, whole wheat flour, baking soda, baking powder, ground cinnamon, and salt. Whisk together to ensure even mixing.

        Mix wet ingredients: In a separate bowl, whisk together the granulated sugar, brown sugar, vegetable oil, vanilla extract, and eggs until well combined.
