1 cup brown rice

2 cups vegetable broth

1 tablespoon olive oil

1 teaspoon cumin

1 teaspoon smoked paprika

1 can (15 oz) black beans, rinsed and drained

1 cup corn (fresh, frozen, or canned)

1 bell pepper (any color), diced

1 small red onion, diced

2 cloves garlic, minced

1 avocado, diced

1 cup cherry tomatoes, halved

1 jalapeño, sliced (optional for heat)

Juice of 1 lime

Salt and pepper to taste

Fresh cilantro for garnish

Optional toppings: Greek yogurt or sour cream, shredded cheese, sliced radishes

Instructions
 

Cook the Rice: In a medium saucepan, bring the vegetable broth to a boil. Add the brown rice, cover, and reduce heat to low. Cook for 45-50 minutes, or until the rice is tender and the liquid is absorbed. Fluff with a fork and set aside.

    Sauté the Veggies: In a large skillet, heat the olive oil over medium heat. Add the diced red onion and sauté for 3-4 minutes or until it becomes translucent. Stir in the minced garlic, diced bell pepper, cumin, and smoked paprika. Cook for an additional 3-4 minutes until the peppers soften.

      Add Beans and Corn: Stir in the black beans and corn, allowing them to heat through for about 5 minutes. Season with salt, pepper, and lime juice. If you're using jalapeño for some heat, add it now and cook for another minute.

        Combine: In a large serving bowl, combine the cooked brown rice with the sautéed veggie mixture and mix well to evenly distribute.

          Top It Off: Add diced avocado and halved cherry tomatoes on top of the rice and veggie mixture. Garnish with fresh cilantro and your choice of optional toppings, such as Greek yogurt, shredded cheese, or sliced radishes.
