1 pound medium shrimp, peeled and deveined

2 ripe avocados, diced

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 small red onion, finely chopped

1 small jalapeño, seeded and minced (optional for a kick)

1/4 cup fresh cilantro, chopped

Juice of 2 limes

1 tablespoon olive oil

1 teaspoon cumin

Salt and pepper to taste

Mixed greens or arugula for serving

Prepare the Shrimp: In a medium saucepan, bring salted water to a boil. Add the shrimp and cook for 2-3 minutes until they turn pink and opaque. Drain and place them in a bowl. Allow them to cool slightly.

    Make the Dressing: In a small bowl, whisk together lime juice, olive oil, cumin, salt, and pepper. Adjust seasonings to your preference.

      Combine the Ingredients: In a large bowl, combine the cooked shrimp, diced avocados, cherry tomatoes, cucumber, red onion, jalapeño (if using), and cilantro.

        Add Dressing: Pour the dressing over the shrimp and vegetable mixture. Gently toss to combine, being careful not to mash the avocados.

          Serve: Arrange a bed of mixed greens or arugula on serving plates and top with the shrimp and avocado mixture. Garnish with extra cilantro if desired.
