4 boneless, skinless chicken breasts

Zest of 2 large lemons

Juice of 3 large lemons

3 cloves garlic, minced

1 tablespoon honey

1 teaspoon Dijon mustard

1 teaspoon dried oregano

1 teaspoon dried thyme

1/2 teaspoon red pepper flakes (adjust to taste)

Salt and freshly ground black pepper, to taste

3 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Marinate the Chicken: In a medium bowl, combine the lemon zest, lemon juice, minced garlic, honey, Dijon mustard, dried oregano, dried thyme, red pepper flakes, salt, pepper, and olive oil. Whisk until well blended.

    Prepare Chicken: Place the chicken breasts in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring it is well coated. Seal the bag (or cover the dish) and marinate in the refrigerator for at least 30 minutes, or up to 2 hours for maximum flavor.

      Preheat Grill: Preheat your grill to medium-high heat. If using a grill pan, heat it over medium-high heat and brush lightly with olive oil.

        Grill the Chicken: Remove the chicken from the marinade and let the excess drip off. Place the chicken on the grill (or grill pan) and cook for about 6-8 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken is no longer pink in the middle.
