2 large flatbreads

2 cups cooked chicken, shredded

1 cup BBQ sauce (your favorite brand or homemade)

1 cup mozzarella cheese, shredded

½ cup red onion, thinly sliced

½ cup sweet corn (canned or frozen)

1 cup fresh cilantro, chopped

1 avocado, sliced

1 lime, cut into wedges

Salt and pepper to taste

Olive oil for brushing

Optional: Jalapeño slices for a spicy kick

Instructions
 

Prepare the Oven: Preheat your oven to 400°F (200°C) and lightly grease a baking sheet with olive oil or line it with parchment paper.

    Mix the Chicken and Sauce: In a mixing bowl, combine the shredded chicken with ¾ cup of BBQ sauce. Stir until the chicken is well-coated. Season with salt and pepper as needed.

      Assemble the Flatbreads: Lay the flatbreads on the prepared baking sheet. Evenly distribute the BBQ chicken mixture over each flatbread.

        Add Toppings: Sprinkle the shredded mozzarella cheese generously over the chicken. Then, add sliced red onions and sweet corn on top.

          Bake: Place the baking sheet in the preheated oven and bake for about 10-12 minutes, or until the cheese is melted and bubbly, and the edges of the flatbreads are crispy.

            Garnish: Once cooked, remove the flatbreads from the oven. Top each flatbread with fresh cilantro and sliced avocado. If desired, add jalapeño slices for extra heat.

              Serve: Squeeze fresh lime juice over the top of each flatbread before slicing them into quarters. Serve warm with additional lime wedges on the side.
