Ingredients

4 cups seedless watermelon, cubed and frozen

1 cup coconut water (or regular water)

1 tablespoon lime juice (freshly squeezed)

1 tablespoon honey or agave syrup (optional for sweetness)

Fresh mint leaves for garnish (optional)

Instructions

Prepare Watermelon: If you haven't already, cut the watermelon into cubes and place them in a single layer on a baking sheet. Freeze for at least 4 hours, or until fully frozen.

Combine Ingredients: In a blender, combine the frozen watermelon cubes, coconut water, lime juice, and honey/agave syrup (if using).

Blend: Blend on high speed until the mixture is smooth and slushy, scraping down the sides of the blender as needed. Adjust the consistency by adding more coconut water if it’s too thick.

Taste and Adjust: Taste your slushie. If you’d like it sweeter, add more honey or agave syrup and blend again.

Serve: Pour the slushie into chilled glasses, and garnish with fresh mint leaves if desired.

Enjoy: Serve immediately with a straw or spoon. Perfect for a hot day!
