4 large russet potatoes, peeled and diced

6 slices of thick-cut bacon, chopped

1 medium onion, finely diced

3 cloves garlic, minced

4 cups chicken or vegetable broth

1 cup heavy cream

1 teaspoon dried thyme

1/2 teaspoon smoked paprika

Salt and pepper to taste

Fresh chives or parsley for garnish

Optional: Shredded cheddar cheese for serving

Instructions
 

Cook the Bacon: In a large pot over medium heat, cook the chopped bacon until crispy. Remove the bacon with a slotted spoon and set aside on a paper towel to drain, leaving the rendered fat in the pot.

    Sauté Vegetables: In the same pot, add the diced onion to the bacon fat. Sauté until the onion becomes translucent, about 4-5 minutes. Add the minced garlic and cook for an additional 1 minute, stirring frequently to avoid burning.

      Add Potatoes: Stir in the diced potatoes and cook for about 3 minutes, ensuring they get coated in the bacon fat and onion mixture.

        Pour in Broth: Add the chicken or vegetable broth to the pot and bring to a boil. Once boiling, reduce the heat to medium-low, cover, and let it simmer for about 15-20 minutes or until the potatoes are tender.

          Blend the Soup: Using an immersion blender, carefully purée the soup until smooth (or transfer in batches to a blender to purée, then return to the pot).

            Make it Creamy: Stir in the heavy cream, dried thyme, smoked paprika, and season with salt and pepper to taste. Allow the soup to heat through for another 5 minutes but do not let it reach a boil.

              Finish with Bacon: Stir in the crispy bacon, reserving some for garnish.

                Serve: Ladle the soup into bowls and garnish with fresh chives or parsley and a sprinkle of shredded cheddar cheese if desired.
