1 cup plain Greek yogurt

1 cup all-purpose flour

1/2 cup whole wheat flour

1/2 cup brown sugar, packed

1/3 cup honey or maple syrup

2 large eggs

1/4 cup melted coconut oil (or vegetable oil)

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

1/4 teaspoon salt

1 large apple, peeled, cored, and diced (about 1 cup)

Optional: 1/4 cup chopped walnuts or pecans, for added crunch

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease or line a muffin tin with paper liners.

    Mix Wet Ingredients: In a large mixing bowl, combine the Greek yogurt, brown sugar, honey/maple syrup, eggs, melted coconut oil, and vanilla extract. Whisk together until smooth and well combined.

      Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, ground cinnamon, and salt.

        Combine Wet and Dry Mixtures: Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.

          Add Apples: Fold in the diced apple and optional nuts (if using) until evenly distributed.

            Fill Muffin Tins: Scoop the batter into the prepared muffin tin, filling each cup about 2/3 full.
