4 cups ripe cherry tomatoes (mixed colors preferred)

8 oz feta cheese, crumbled (preferably Greek-style)

1/4 cup extra virgin olive oil

2 tablespoons balsamic vinegar

1 teaspoon honey (optional, for sweetness)

1/4 teaspoon red pepper flakes (adjust to taste)

Salt and black pepper to taste

Fresh basil leaves for garnish

1/4 cup red onion, thinly sliced (optional)

1/4 cup fresh parsley, chopped (optional)

Instructions
 

Prepare the Tomatoes: Rinse the cherry tomatoes under cold water and pat them dry. If some are larger, you can halve or quarter them for even distribution in the salad.

    Combine Ingredients: In a large mixing bowl, add the cherry tomatoes. Sprinkle the crumbled feta cheese over the top.

      Make the Dressing: In a small bowl, whisk together the extra virgin olive oil, balsamic vinegar, honey, red pepper flakes, salt, and black pepper until well combined.
