1 medium onion, chopped

2 cloves garlic, minced

1 carrot, peeled and diced

2 cans (14 oz each) crushed tomatoes

3 cups vegetable broth

1 teaspoon sugar

1 teaspoon dried basil

½ teaspoon dried oregano

Salt and pepper, to taste

1 cup heavy cream (or coconut cream for a vegan option)

1 cup fresh basil leaves, chopped

Optional: Fresh basil leaves for garnish

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion, and cook for about 3-4 minutes until translucent. Stir in the minced garlic and diced carrot, cooking for another 2-3 minutes until fragrant and softened.

    Add Tomatoes and Herbs: Pour in the crushed tomatoes along with the vegetable broth. Stir in the sugar, dried basil, dried oregano, salt, and pepper. Bring the mixture to a gentle boil, then reduce the heat and let it simmer uncovered for about 20 minutes, allowing the flavors to meld and the carrots to become tender.

      Blend the Soup: Using an immersion blender, carefully blend the soup until smooth and creamy. If you don’t have an immersion blender, you can transfer the soup in batches to a countertop blender. Ensure you allow it to cool slightly and remove the center lid to avoid steam buildup while blending.

        Integrate Cream and Fresh Basil: Once blended, return the soup to the pot (if using a countertop blender). Stir in the heavy cream (or coconut cream) and chopped fresh basil, mixing until fully incorporated. Heat gently for another 5 minutes; do not boil. Adjust seasoning if necessary.
