Ingredients

1 cup all-purpose flour

1 ripe banana, mashed

1 tablespoon baking powder

1 tablespoon sugar (or maple syrup)

1/4 teaspoon salt

1 cup almond milk (or any plant-based milk)

1 teaspoon vanilla extract

2 tablespoons vegetable oil (or melted coconut oil)

Optional toppings: maple syrup, fresh fruit, or nut butter

Instructions

Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, sugar, and salt until well combined.

Combine Wet Ingredients: In another bowl, mix the mashed banana, almond milk, vanilla extract, and vegetable oil. Stir until smooth and well incorporated.

Combine Wet and Dry Mixtures: Pour the wet mixture into the dry ingredients and gently stir until just combined. Do not overmix; a few lumps are perfectly fine.

Preheat the Griddle: Heat a non-stick skillet or griddle over medium heat. You can lightly grease it with vegan butter or cooking spray if desired.

Cook the Pancakes: Pour about 1/4 cup of batter onto the preheated skillet. Cook for 2-3 minutes until bubbles form on the surface, then flip and cook for an additional 1-2 minutes on the other side, or until golden brown.

Serve Warm: Remove from the skillet and serve immediately with your choice of toppings like maple syrup, fresh berries, or a dollop of nut butter.

Enjoy!: Repeat with the remaining batter, adjusting the heat as necessary to avoid burning the pancakes.
