Tuscan Creamy Shrimp Pasta

8 oz fettuccine pasta

1 lb large shrimp, peeled and deveined

2 tbsp olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup fresh spinach, chopped

1 cup heavy cream

½ cup grated Parmesan cheese

1 tsp Italian seasoning

Salt and pepper to taste

Fresh basil, for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside, reserving ½ cup of the pasta water.

    Sauté the Shrimp: In a large skillet over medium heat, add olive oil. Once hot, add the shrimp. Season with salt and pepper and sauté for about 2-3 minutes per side, until they turn pink and are cooked through. Remove shrimp from the skillet and set aside.

      Prepare the Sauce: In the same skillet, add minced garlic and cherry tomatoes. Cook for about 2-3 minutes until the tomatoes begin to blister. Then, add the chopped spinach and stir until wilted.

        Add Cream and Cheese: Lower the heat and pour in the heavy cream. Stir to combine and allow it to simmer for about 5 minutes. Gradually mix in the grated Parmesan cheese until melted and the sauce is creamy. If the sauce is too thick, add a splash of the reserved pasta water.

          Combine: Return the cooked shrimp to the skillet and add the drained fettuccine. Toss everything together until the pasta is well coated with the sauce. Season with Italian seasoning, salt, and pepper to taste.

            Serve: Divide the creamy shrimp pasta among plates, garnish with fresh basil, and enjoy!
