Ingredients

1 ripe pineapple, diced

2 ripe mangos, diced

2 bananas, sliced

1 cup of strawberries, halved

1 kiwi, peeled and sliced

1 cup of blueberries

1 cup of cubed watermelon

1/2 cup of shredded coconut (unsweetened)

1/4 cup of fresh mint leaves, chopped

For the Lime Honey Dressing:

3 tablespoons of honey

2 tablespoons of lime juice (freshly squeezed)

Zest of 1 lime

Pinch of salt

Instructions

Prepare the Fruits: In a large mixing bowl, combine the diced pineapple, mangos, sliced bananas, halved strawberries, kiwi slices, blueberries, and cubed watermelon. Gently toss to combine all the fruits without mashing them.

Make the Dressing: In a small bowl, whisk together the honey, fresh lime juice, lime zest, and a pinch of salt until well combined. The dressing should be smooth and slightly runny.

Dress the Salad: Drizzle the lime honey dressing over the mixed fruits. Use a spatula or a large spoon to gently mix the dressing through the salad, ensuring that each piece of fruit is coated.

Add Coconut and Mint: Sprinkle the shredded coconut and chopped mint leaves over the fruit salad. Gently fold to distribute the coconut and mint evenly throughout the salad.

Chill and Serve: Let the salad sit for about 15 minutes in the refrigerator before serving to allow the flavors to meld together. Serve cold, garnished with extra mint leaves if desired.
