12 oz cheese tortellini (fresh or frozen)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 red onion, finely chopped

1/2 cup black olives, sliced

1/2 cup bell pepper (any color), diced

1 cup baby spinach or arugula

1/4 cup fresh basil, chopped

1/4 cup feta cheese, crumbled

1/4 cup olive oil

2 tbsp red wine vinegar

1 tsp garlic powder

1 tsp Italian seasoning

Salt and pepper to taste

Cook the Tortellini: In a large pot, bring salted water to a boil. Add the tortellini and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Allow to cool.

    Prepare the Veggies: While the tortellini is cooking, chop the cherry tomatoes, cucumber, red onion, black olives, and bell pepper. In a large mixing bowl, combine these chopped vegetables.

      Mix the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, garlic powder, Italian seasoning, salt, and pepper until emulsified.
