4 ripe tomatoes, diced

2 ripe peaches, diced (with skin on)

1 medium red onion, thinly sliced

3 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon balsamic vinegar

1 teaspoon fresh thyme leaves (or ¼ teaspoon dried thyme)

1 teaspoon fresh basil, chopped (plus extra for garnish)

Salt and pepper to taste

1 tablespoon honey (optional for added sweetness)

1 cup crumbled feta cheese

Heat the Skillet: In a large skillet, heat the olive oil over medium heat until shimmering.

    Sauté Onions: Add the sliced red onions to the skillet and sauté for 3-4 minutes until they become translucent and begin to soften.

      Add Garlic: Toss in the minced garlic and sauté for an additional 1-2 minutes, stirring frequently to prevent burning.

        Incorporate Tomatoes and Peaches: Add the diced tomatoes and peaches to the skillet. Stir gently to combine and cook for about 5-7 minutes, allowing the flavors to meld together.
