1 1/4 cups all-purpose flour

1/2 teaspoon salt

1/4 teaspoon sugar

1/2 cup unsalted butter, cold and cubed

4-5 tablespoons ice water

3-4 medium ripe tomatoes, sliced

1 cup shredded mozzarella cheese (or goat cheese for a tangy option)

2 tablespoons fresh basil, chopped

1 tablespoon balsamic vinegar

1 teaspoon olive oil

Salt and pepper, to taste

1 egg, for egg wash (optional)

Fresh basil leaves for garnish

Instructions
 

Make the Pie Crust:

    - In a medium bowl, combine the flour, salt, and sugar.

      - Add the cold, cubed butter and use a pastry cutter or your fingers to combine until the mixture resembles coarse crumbs.

        - Gradually add the ice water, one tablespoon at a time, mixing until the dough just comes together. Avoid overworking it.

          - Form the dough into a ball, flatten it into a disk, cover in plastic wrap, and refrigerate for at least 30 minutes.

            Prepare the Filling:

              - Preheat your oven to 400°F (200°C).

                  - In another bowl, mix mozzarella cheese with chopped basil, balsamic vinegar, olive oil, salt, and pepper.
