Tomato Corn Avocado Salad

Ingredients
  

2 cups cherry tomatoes, halved

1 cup fresh corn kernels (about 2 ears of corn)

1 ripe avocado, diced

1/2 red onion, finely chopped

1/4 cup fresh cilantro, chopped

Juice of 1 lime

2 tablespoons olive oil

Salt and freshly ground black pepper, to taste

Optional: 1 jalapeño, finely chopped (for a kick)

Instructions
 

Prepare the Corn: If using fresh corn, bring a pot of water to a boil. Add the corn and cook for 3-4 minutes until just tender. Remove and cool, then cut the kernels off the cob. If using frozen corn, simply thaw it and drain.

    Combine the Base Ingredients: In a large mixing bowl, add the halved cherry tomatoes, fresh corn kernels, diced avocado, and chopped red onion. If you're using jalapeño, add that as well for an extra kick.

      Make the Dressing: In a small bowl, whisk together the lime juice, olive oil, salt, and pepper. Adjust seasoning to your preference.

        Mix Everything Together: Pour the dressing over the salad mixture. Add the chopped cilantro and gently toss everything together, being careful not to mash the avocado.

          Taste and Adjust: Whet your palate by tasting the salad. Add more lime juice, salt, or pepper if needed.
