Ingredients

1 sheet of puff pastry (thawed if frozen)

3 large ripe tomatoes (sliced)

1 cup fresh basil leaves (torn)

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 cloves garlic (minced)

1 tablespoon olive oil

Salt and pepper to taste

1 egg (beaten, for egg wash)

Balsamic glaze (for drizzling, optional)

Instructions

Preheat Oven: Preheat your oven to 400°F (200°C).

Prepare Puff Pastry: On a lightly floured surface, roll out the puff pastry to fit your tart pan (about 12 inches in diameter). Carefully transfer it to the tart pan and trim any excess pastry hanging over the edges. Prick the bottom with a fork to prevent bubbling.

Pre-Bake the Crust: Place the pastry in the oven and bake for about 10 minutes until slightly golden. Remove from the oven and let cool slightly.

Mix Cheeses: In a bowl, combine the ricotta, mozzarella, Parmesan, minced garlic, and a pinch of salt and pepper. Stir until well combined.

Assemble the Tart: Spread the cheese mixture evenly over the pre-baked tart crust. Layer the sliced tomatoes on top in a visually pleasing manner and sprinkle with salt, pepper, and a drizzle of olive oil. Add the torn basil leaves evenly over the tomatoes.

Egg Wash: Brush the edges of the pastry with the beaten egg to give it a lovely golden color as it bakes.

Bake the Tart: Return the tart to the oven and bake for an additional 25-30 minutes, or until the tomatoes are soft and the pastry is fully cooked and golden brown.

Serve: Allow the tart to cool for a few minutes before slicing. Drizzle with balsamic glaze if desired, and serve warm or at room temperature.
