Tofu Lettuce Wraps with Strawberry Glaze

Ingredients
  

1 block firm tofu, pressed and drained

1 cup strawberries, hulled and chopped

2 tablespoons honey or maple syrup (use maple for vegan)

1 tablespoon soy sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 tablespoon cornstarch

1 tablespoon vegetable oil

1 red bell pepper, diced

2 green onions, finely chopped

1 carrot, shredded

1 tablespoon fresh ginger, minced

1 tablespoon garlic, minced

Salt and pepper to taste

1 head of butter or romaine lettuce, leaves separated

Prepare the Tofu: Cut the pressed tofu into small cubes. In a bowl, mix the cornstarch, salt, and pepper. Toss the tofu cubes in the mixture until they are well-coated.

    Cook the Tofu: Heat the vegetable oil in a nonstick pan over medium heat. Add the tofu cubes and pan-fry until golden and crispy on all sides, about 10 minutes. Remove from the pan and set aside.

      Make the Strawberry Glaze: In the same pan, add the minced garlic and ginger. Sauté for about a minute until fragrant. Add the chopped strawberries, honey/maple syrup, soy sauce, and rice vinegar. Cook until the strawberries break down and the mixture thickens slightly, around 5-7 minutes. Remove from heat and set aside.

        Sauté the Vegetables: In the same pan, add the diced red bell pepper and cook for 2-3 minutes until slightly softened. Add the cooked tofu back into the pan and stir to combine, warming everything through.

          Assemble the Wraps: Take a lettuce leaf and spoon some of the tofu-vegetable mixture into the center. Drizzle a generous amount of the strawberry glaze over the top.

            Garnish and Serve: Sprinkle with chopped green onions and serve immediately, allowing your guests to wrap the lettuce around the filling as they wish.
