1 lb ground chicken

2 tablespoons vegetable oil

2 cloves garlic, minced

1 tablespoon ginger, minced

1 small red bell pepper, finely diced

1 cup shredded carrots

1/4 cup green onions, chopped

2 tablespoons soy sauce

1 tablespoon fish sauce (optional)

1 tablespoon hoisin sauce

1 tablespoon lime juice

1 teaspoon sesame oil

Salt and pepper to taste

For the Peanut Sauce:

1/2 cup creamy peanut butter

1/4 cup soy sauce

2 tablespoons rice vinegar

1 tablespoon honey or maple syrup

1 clove garlic, minced

1 tablespoon fresh ginger, minced

Water (to thin the sauce as needed)

To Serve:

1 head of butter or iceberg lettuce (for wrapping)

Fresh cilantro leaves

Chopped peanuts (for garnish)

Lime wedges (for drizzling)

Instructions
 

Prepare the Peanut Sauce: In a mixing bowl, combine the peanut butter, soy sauce, rice vinegar, honey or maple syrup, minced garlic, and ginger. Whisk everything together until smooth. If the sauce is too thick, gradually add water until you reach your desired consistency. Set aside.

    Cook the Chicken Filling: In a large skillet, heat the vegetable oil over medium-high heat. Add the minced garlic and ginger, sautéing for about 30 seconds until fragrant.

      Add Chicken: Add the ground chicken to the skillet, breaking it apart with a spatula. Cook for about 5-7 minutes until browned and cooked through.

        Add Vegetables and Sauces: Stir in the diced red bell pepper, shredded carrots, and green onions. Cook for an additional 2-3 minutes until the vegetables are slightly softened. Then, add soy sauce, fish sauce (if using), hoisin sauce, lime juice, sesame oil, salt, and pepper. Mix well to combine, and cook for another minute.

          Assemble the Wraps: Carefully separate the lettuce leaves, keeping them whole for wrapping. Place a generous scoop of the chicken filling in the center of each leaf. Drizzle with peanut sauce and top with fresh cilantro and chopped peanuts.
