1/4 cup soy sauce

2 tablespoons honey

2 tablespoons rice vinegar

1 tablespoon mirin (Japanese sweet rice wine)

1 clove garlic, minced

1 teaspoon freshly grated ginger

1 tablespoon cornstarch mixed with 1 tablespoon water (for thickening)

For the Salmon Bowl:

4 salmon fillets (6 oz each)

Salt and pepper, to taste

1 tablespoon olive oil

2 cups cooked jasmine rice (or any preferred rice)

1 cup steamed broccoli florets

1 cup shredded carrots

1/2 avocado, sliced

1/4 cup chopped green onions

Sesame seeds, for garnish

Instructions
 

Make the Teriyaki Sauce:

    - In a small saucepan, combine soy sauce, honey, rice vinegar, mirin, minced garlic, and grated ginger. Cook over medium heat, stirring occasionally until the mixture begins to simmer.

      - Once simmering, add the cornstarch-water mixture to the saucepan. Whisk continuously until the sauce thickens (about 2-3 minutes). Remove from heat and set aside.

        Prepare the Salmon:

          - Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

            - Season the salmon fillets on both sides with salt and pepper.

              - Heat olive oil in a pan over medium-high heat. Sear the salmon, skin side down, for 3-4 minutes until the skin is crispy. Carefully flip each fillet.

                - Brush the teriyaki sauce generously over the tops of the salmon fillets. Bake in the preheated oven for 10-12 minutes, or until the salmon flakes easily with a fork.

                  Assemble the Bowls:

                    - In each serving bowl, place a generous scoop of jasmine rice as the base.

                      - Top the rice with steamed broccoli, shredded carrots, and a few slices of avocado.

                        - Place a teriyaki-glazed salmon fillet on top of the vegetables.

                          - Drizzle additional teriyaki sauce over the assembled bowls, if desired.
