Tangy Tzatziki Turkey Meatballs

1 lb ground turkey

1 cup breadcrumbs (preferably whole wheat)

1/4 cup grated Parmesan cheese

1/4 cup chopped fresh parsley

2 cloves garlic, minced

1 tsp onion powder

1 tsp ground cumin

1/2 tsp salt

1/4 tsp black pepper

1 egg, lightly beaten

Zest of 1 lemon

1 cup Greek yogurt

1/2 cucumber, grated and drained

1 clove garlic, minced (for tzatziki)

1 tbsp fresh dill, chopped

1 tbsp lemon juice (for tzatziki)

Instructions
 

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

    In a large bowl, combine the ground turkey, breadcrumbs, Parmesan cheese, parsley, minced garlic, onion powder, cumin, salt, black pepper, beaten egg, and lemon zest. Mix well until all ingredients are evenly incorporated.

      Form the mixture into meatballs, about 1 inch in diameter, and place them on the prepared baking sheet, leaving some space between each ball.

        Bake in the preheated oven for 20-25 minutes, or until the meatballs are cooked through and have reached an internal temperature of 165°F (74°C).

          While the meatballs are baking, prepare the tzatziki sauce: In a medium bowl, combine the Greek yogurt, grated cucumber, minced garlic, dill, and lemon juice. Stir until well mixed. Adjust seasoning with salt and pepper to taste.

            Once the meatballs are done, remove them from the oven and let them rest for a few minutes.

              Serve the meatballs warm with a side of tangy tzatziki sauce for dipping, and garnish with additional fresh dill if desired. Enjoy!
