2 cans young green jackfruit in brine or water, drained and rinsed

1 tablespoon olive oil

1 small onion, finely chopped

3 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon chili powder

1/2 teaspoon black pepper

1 cup BBQ sauce (store-bought or homemade)

1 tablespoon apple cider vinegar

Salt to taste

8 slider buns (mini burger buns)

Coleslaw (for topping) (optional)

Fresh cilantro or parsley, for garnish (optional)

Prepare the Jackfruit: Start by cutting the jackfruit pieces into smaller chunks, removing any hard cores. Use your fingers or a fork to shred the jackfruit into a pulled texture.

    Sauté the Aromatics: In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until soft and translucent, about 4-5 minutes. Add the minced garlic and cook for an additional minute until fragrant.

      Cook the Jackfruit: Add the shredded jackfruit to the skillet. Sprinkle in the smoked paprika, ground cumin, chili powder, black pepper, and a pinch of salt. Stir to combine the jackfruit with the spices and cook for about 5-7 minutes, allowing the flavors to meld.

        Add Sauce: Pour in the BBQ sauce and apple cider vinegar. Stir well to coat the jackfruit evenly. Reduce the heat to low and let it simmer for about 15-20 minutes, stirring occasionally, until the jackfruit is tender and the sauce has thickened.
