8 oz spaghetti

1 lb ground beef (or turkey)

1 medium onion, diced

2 cloves garlic, minced

1 packet taco seasoning (about 1 oz)

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) diced tomatoes with green chilies

1 cup corn (frozen or canned)

1 cup beef broth (or water)

1 cup shredded cheddar cheese (plus extra for topping)

1/2 cup sour cream (optional for serving)

Fresh cilantro, chopped (for garnish)

Sliced jalapeños (for garnish, optional)

Instructions
 

Cook the Spaghetti: In a large pot of boiling salted water, cook the spaghetti according to package directions until al dente. Drain and set aside.

    Sauté the Vegetables: In a large skillet over medium heat, add a drizzle of olive oil. Add the diced onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic and cook for an additional 1 minute, ensuring it doesn’t burn.

      Brown the Meat: Add the ground beef (or turkey) to the skillet, breaking it apart with a spatula. Cook until browned and fully cooked, about 5-7 minutes. Drain excess fat if necessary.

        Mix in Seasonings: Sprinkle the taco seasoning over the cooked meat and stir well to combine. Follow by adding the black beans, diced tomatoes with green chilies, corn, and beef broth. Mix everything together and bring to a simmer.

          Combine Spaghetti: Add the cooked spaghetti to the skillet, tossing everything together to ensure the pasta is well-coated with the sauce. Let it simmer for another 3-5 minutes on low heat to help the flavors meld.

            Add Cheese: Remove the skillet from heat and stir in the shredded cheddar cheese until melted and evenly distributed throughout the pasta.
