Taco Salad with Creamy Cilantro Dressing

For the Salad:

1 lb ground beef or turkey

1 packet taco seasoning (or homemade blend)

1 can (15 oz) black beans, drained and rinsed

1 cup corn (canned or frozen)

2 cups romaine lettuce, chopped

1 cup cherry tomatoes, halved

1 avocado, diced

1 cup shredded cheddar cheese

1 small red onion, diced

1/2 cup black olives, sliced (optional)

Tortilla chips, for topping

For the Creamy Cilantro Dressing:

1/2 cup sour cream

1/4 cup mayonnaise

1/4 cup fresh cilantro, chopped

2 tablespoons lime juice

1 clove garlic, minced

Salt and pepper, to taste

Instructions
 

Cook the Meat:

    - In a large skillet over medium heat, add the ground beef or turkey. Cook until browned, breaking it apart with a spatula, about 5-7 minutes.

      - Drain excess grease if needed. Add taco seasoning and a splash of water. Stir to combine, cooking for another 3-5 minutes until the meat is fully seasoned. Remove from heat and set aside.

        Prepare the Dressing:

          - In a medium bowl, whisk together the sour cream, mayonnaise, chopped cilantro, lime juice, minced garlic, salt, and pepper until smooth. Adjust seasoning to taste and set aside.

            Assemble the Salad:

              - In a large salad bowl or individual serving bowls, start layering: begin with the chopped romaine lettuce as the base.

                - Next, add the seasoned ground meat, black beans, corn, diced tomatoes, avocado, shredded cheese, and diced red onion in sections or mix them all together if you prefer.

                  Add Olives and Chips:

                    - If using, sprinkle the sliced black olives on top of the salad. Finish by adding a handful of tortilla chips, either whole or crushed, for that extra crunch.

                      Drizzle and Serve:

                        - Drizzle the creamy cilantro dressing over the salad just before serving, or serve it on the side for everyone to customize their own portions. Enjoy!
