Ingredients

8 oz elbow macaroni

1 lb ground beef or turkey

1 small onion, diced

2 cloves garlic, minced

1 bell pepper (any color), diced

1 packet taco seasoning mix (about 1 oz)

1 can (14 oz) diced tomatoes with green chilies

1 cup beef or chicken broth

1 cup shredded cheddar cheese

1 cup sour cream

Salt and pepper to taste

Chopped fresh cilantro for garnish

Crushed tortilla chips (optional, for topping)

Instructions

Cook the Pasta: In a large pot of salted boiling water, cook the elbow macaroni according to package directions until al dente. Drain and set aside.

Sauté the Veggies: In a large skillet over medium heat, add the ground beef or turkey. Cook until browned, breaking it apart with a spoon. Add the diced onion, garlic, and bell pepper; sauté for about 5 minutes until the veggies are tender.

Season the Meat: Stir in the taco seasoning and cook for an additional minute, allowing the spices to bloom.

Add Tomatoes and Broth: Pour in the diced tomatoes (with juices) and the broth. Bring the mixture to a gentle simmer, allowing the flavors to meld for about 5-7 minutes.

Mix in the Pasta: Add the cooked elbow macaroni to the skillet, mixing well to combine all ingredients. Cook for another 2-3 minutes until everything is heated through.

Stir in Cheesy Goodness: Gradually mix in the shredded cheddar cheese and sour cream until melted and creamy. Season with salt and pepper to taste.

Serve and Garnish: Spoon the taco pasta into bowls and garnish with fresh cilantro and crushed tortilla chips, if desired. Enjoy your delicious Taco Pasta Fiesta!
