1 lb ground beef (or turkey)

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies, undrained

1 packet taco seasoning

1 cup salsa

8 small corn tortillas, cut into quarters

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1/2 cup sour cream

1/4 cup chopped fresh cilantro (for garnish)

1 jalapeño, sliced (optional, for garnish)

Avocado slices (optional, for garnish)

Instructions
 

Preheat the Oven: Start by preheating your oven to 350°F (175°C).

    Cook the Meat: In a large skillet over medium heat, cook the ground beef (or turkey) until browned and cooked through, breaking it apart as it cooks, about 6-8 minutes. Drain any excess fat.

      Add Ingredients: Stir in the black beans, corn, diced tomatoes with green chilies, taco seasoning, and salsa. Mix well and let it simmer for about 5 minutes to allow the flavors to meld.

        Layer the Casserole: In a 9x13-inch baking dish, spread half of the meat mixture evenly across the bottom. Layer half of the tortilla quarters on top, then sprinkle with half of the cheddar cheese and half of the Monterey Jack cheese.

          Repeat Layers: Add the remaining meat mixture on top, followed by the remaining tortilla quarters. Finish with the rest of the cheddar and Monterey Jack cheese.

            Bake: Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Then, remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and lightly browned.

              Serve: Remove the casserole from the oven and allow it to cool for a few minutes. Top with dollops of sour cream, chopped cilantro, and sliced jalapeños or avocado, if desired.

                Enjoy: Cut into squares and serve warm, alongside additional salsa or toppings of your choice!
