For the Chalupa Shell:

1 ½ cups masa harina

¾ cup warm water

½ teaspoon salt

Oil for frying

For the Filling:

1 lb ground beef (or substitute with turkey or plant-based protein)

1 packet taco seasoning

1 cup shredded lettuce

1 cup diced tomatoes

1 cup shredded cheddar cheese

½ cup sour cream

½ cup guacamole (or sliced avocado)

Sliced black olives (optional)

Fresh cilantro for garnish (optional)

Instructions
 

Prepare the Chalupa Shells:

    - In a mixing bowl, combine masa harina and salt. Gradually add warm water until a dough forms. Knead for a few minutes until smooth.

      - Divide the dough into 6-8 equal portions and shape each into a ball. Flatten each ball between two pieces of parchment paper using a tortilla press or a rolling pin to about ¼ inch thick.

        Fry the Chalupa Shells:

          - Heat oil in a deep skillet or frying pan over medium-high heat. Once hot (about 350°F), gently place one flattened dough round into the oil. Fry for about 30 seconds on each side, or until golden brown and slightly puffed.

            - Remove from oil and place on a paper towel-lined plate to drain excess oil. Repeat with the remaining dough.

              Cook the Beef Filling:

                - In a skillet, brown the ground beef over medium heat until fully cooked, breaking it up with a spatula. Drain excess fat.

                  - Stir in taco seasoning and follow the package instructions (usually adding water and simmering). Cook until the mixture thickens.
