Ingredients

For the Brownie Cookies:

1 cup (200g) granulated sugar

1/2 cup (100g) light brown sugar, packed

1/2 cup (1 stick) unsalted butter, melted

2 large eggs

1 teaspoon vanilla extract

1/3 cup (40g) unsweetened cocoa powder

1 cup (130g) all-purpose flour

1/4 teaspoon baking powder

1/4 teaspoon salt

1/2 cup (90g) semi-sweet chocolate chips

For the Peanut Butter Swirl:

1/2 cup (125g) creamy peanut butter

1/4 cup (50g) powdered sugar

1 tablespoon milk (or as needed)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper for easy cleanup.

Make the Brownie Cookie Dough: In a large mixing bowl, whisk together the granulated sugar, light brown sugar, and melted butter until smooth. Add the eggs one by one, followed by the vanilla extract, mixing thoroughly after each addition.

Combine Dry Ingredients: In a separate bowl, sift together the cocoa powder, flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, stirring until just combined. Be careful not to overmix. Fold in the chocolate chips.

Prepare the Peanut Butter Swirl: In a small bowl, mix together the creamy peanut butter, powdered sugar, and milk until you achieve a smooth, drizzling consistency. If it's too thick, add a little more milk to reach your desired texture.

Create the Swirl: Using a cookie scoop or a tablespoon, drop heaping spoonfuls of the brownie cookie dough onto the prepared baking sheet, spacing them about 2 inches apart. Then, using a small spoon or a toothpick, add small dollops of the peanut butter mixture on top of each cookie dough ball. Using a toothpick or a knife, gently swirl the peanut butter into the brownie dough, creating a marbled effect.

Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are set but the centers still look slightly soft. Remove from the oven and let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

Serve and Enjoy: Once cooled, serve your swirled brownie cookies with a glass of milk or your favorite beverage, and enjoy every delicious bite!
