Sweet & Tangy Broccoli Salad

Ingredients
  

4 cups fresh broccoli florets

1 cup red grapes, halved

1/2 cup dried cranberries

1/2 cup roasted sunflower seeds

1/2 cup red onion, thinly sliced

1/2 cup shredded sharp cheddar cheese

1/3 cup mayonnaise

2 tablespoons apple cider vinegar

1 tablespoon honey

1 teaspoon Dijon mustard

Salt and pepper to taste

Instructions
 

Prepare the Broccoli: Bring a large pot of salted water to a boil. Add the broccoli florets and blanch for 3 minutes until they turn bright green. Quickly transfer the florets to a bowl of ice water to shock them and stop the cooking process. Drain and set aside.

    Mix the Dressing: In a small bowl, whisk together the mayonnaise, apple cider vinegar, honey, Dijon mustard, salt, and pepper until well combined and smooth.

      Combine Ingredients: In a large salad bowl, add the blanched broccoli, red grapes, dried cranberries, sunflower seeds, red onion, and shredded cheddar cheese.

        Add Dressing: Pour the dressing over the salad ingredients and gently toss everything together until well coated.

          Chill and Serve: Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld together. Serve chilled as a side dish or a light lunch.
