Ingredients

2 large sweet potatoes, peeled and diced

1 medium onion, diced

1 red bell pepper, diced

2 cloves garlic, minced

1 teaspoon smoked paprika

1/2 teaspoon ground cumin

Salt and black pepper to taste

2 tablespoons olive oil

4 large eggs

Fresh parsley or cilantro, chopped (for garnish)

Instructions

Prepare the Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes and season with salt, black pepper, smoked paprika, and ground cumin. Sauté for about 10-15 minutes, stirring occasionally, until the sweet potatoes are fork-tender and starting to brown.

Add Vegetables: Add the diced onion and red bell pepper to the skillet with the sweet potatoes. Cook for an additional 5-7 minutes, stirring frequently, until the onions are translucent and the peppers are slightly softened.

Incorporate Garlic: Add the minced garlic to the pan and sauté for about 1 minute, until fragrant. Stir everything well to combine the flavors.

Cook the Eggs: Create four small wells in the sweet potato mixture, then crack an egg into each well. Cover the skillet and let the eggs cook to your desired level of doneness (about 5-7 minutes for sunny-side up or until the whites are set).

Finish and Serve: Once the eggs are cooked, remove the skillet from heat. Garnish with fresh parsley or cilantro before serving.

Enjoy!: Serve the sweet potato hash hot, either as a hearty breakfast or a fulfilling brunch option.
