1 large sweet potato, peeled and sliced into thin rounds

1 cup chickpeas, cooked and rinsed (or one 15 oz can)

1 cup red bell pepper, chopped

1/2 cup corn kernels (fresh or frozen)

1 cup diced tomatoes (fresh or canned)

1 small onion, finely chopped

2 cloves garlic, minced

1 tablespoon olive oil

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup shredded mozzarella cheese (or dairy-free alternative)

Fresh cilantro or parsley, for garnish

Optional: Red pepper flakes for extra heat

Preheat the oven: Start by preheating your oven to 425°F (220°C).

    Prepare the sweet potato base: Arrange the sweet potato slices on a baking sheet, drizzle with olive oil, and sprinkle with salt and pepper. Bake in the preheated oven for about 15-20 minutes or until they are tender and slightly crispy.

      Make the chili topping: In a medium skillet over medium heat, add a splash of olive oil. Sauté the chopped onion and minced garlic until they're soft and fragrant, about 3-4 minutes.

        Add the rest of the filling: Stir in the chopped red bell pepper, corn, and chickpeas. Cook for another 5 minutes. Then, add the diced tomatoes, chili powder, cumin, smoked paprika, and salt and pepper to taste. Let the mixture simmer for about 10 minutes, allowing the flavors to meld together.
