Sweet Potato Black Bean Tacos

2 medium sweet potatoes, peeled and diced

1 can (15 oz) black beans, rinsed and drained

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon ground cumin

1/2 teaspoon chili powder

Salt and pepper, to taste

8 small corn or flour tortillas

1 avocado, sliced

1/2 cup red onion, diced

1/2 cup fresh cilantro, chopped

1 lime, cut into wedges

Optional toppings: crumbled feta cheese, salsa, or sour cream

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Roast the Sweet Potatoes: In a large bowl, toss the diced sweet potatoes with olive oil, smoked paprika, cumin, chili powder, salt, and pepper. Spread them evenly on a baking sheet. Roast in the preheated oven for about 25-30 minutes, or until they are tender and slightly caramelized, flipping halfway through cooking.

      Prepare the Black Beans: While the sweet potatoes are roasting, heat a small saucepan over medium heat. Add the rinsed black beans and season with a pinch of salt and pepper. Warm through for about 5-7 minutes, stirring occasionally.

        Warm the Tortillas: In a separate skillet or a dry frying pan, warm the tortillas over medium heat for about 30 seconds on each side until soft and pliable.

          Assemble the Tacos: Once the sweet potatoes are done roasting, take a warm tortilla and add a layer of roasted sweet potatoes, followed by a spoonful of black beans. Top with avocado slices, diced red onion, and fresh cilantro.
