2 medium sweet potatoes, peeled and diced

4 strips of bacon, chopped

1 small onion, diced

1 red bell pepper, diced

2 cloves garlic, minced

1 teaspoon smoked paprika

½ teaspoon cumin

Salt and pepper to taste

2 tablespoons olive oil

2 green onions, sliced (for garnish)

Fresh parsley, chopped (for garnish)

Optional: 2 eggs (for topping)

Instructions
 

Prep Sweet Potatoes: Start by peeling and dicing the sweet potatoes into small cubes, about ½ inch in size. This will help them cook evenly and quickly.

    Cook Bacon: In a large skillet, cook the chopped bacon over medium heat until crispy, about 5-7 minutes. Once cooked, remove the bacon with a slotted spoon and set aside. Leave the rendered bacon fat in the skillet.

      Sauté Vegetables: In the same skillet, add the diced onion and red bell pepper to the bacon fat. Sauté for about 3-4 minutes until they begin to soften. Then, add the minced garlic, smoked paprika, cumin, salt, and pepper, cooking for an additional minute until fragrant.

        Cook Sweet Potatoes: Add the diced sweet potatoes to the skillet, stirring to combine with the vegetables. Drizzle with olive oil for extra flavor and moisture. Cook, stirring occasionally, for about 15-20 minutes until sweet potatoes are tender and crispy, making sure to check and stir every few minutes to prevent sticking.

          Combine Ingredients: Once the sweet potatoes are cooked through, add the crispy bacon back into the skillet. Stir well to combine all ingredients and cook for an additional 2 minutes to heat everything through.
