Sweet Maple Walnut Oat Bars

Ingredients
  

2 cups rolled oats

1 cup chopped walnuts

1/2 cup almond flour

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 cup pure maple syrup

1/4 cup coconut oil, melted

1/2 cup almond butter (or peanut butter)

1 teaspoon pure vanilla extract

1/3 cup dried cranberries or raisins (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x9 inch baking pan or line it with parchment paper.

    Combine Dry Ingredients: In a large mixing bowl, combine the rolled oats, chopped walnuts, almond flour, salt, and ground cinnamon. Mix well to ensure even distribution of the dry ingredients.

      Mix Wet Ingredients: In a separate bowl, whisk together the maple syrup, melted coconut oil, almond butter, and vanilla extract until smooth and well combined.

        Combine Mixtures: Pour the wet mixture into the dry ingredients. Use a spatula to fold the mixture together until everything is evenly coated. If you’re adding dried cranberries or raisins, fold them in at this stage.

          Press into Pan: Transfer the oat mixture into the prepared baking pan, pressing it down firmly and evenly with the back of the spatula or your hands. Make sure it is tightly packed, as this helps the bars hold together once baked.

            Bake: Place the pan in the preheated oven and bake for 20-25 minutes, or until the edges turn a golden brown. Keep an eye on it to avoid overbaking.

              Cool: Remove from the oven and let the pan cool on a wire rack for about 10 minutes. Then, lift the bars out of the pan (if using parchment paper) and let them cool completely on the rack.

                Cut Bars: Once completely cool, use a sharp knife to cut into squares or rectangles, as desired.

                  Store: These bars can be stored in an airtight container at room temperature for up to a week or in the refrigerator for longer freshness.
