3 cups old-fashioned rolled oats

1 cup nuts (your choice: almonds, pecans, or walnuts), roughly chopped

1/2 cup unsweetened shredded coconut

1/2 cup pumpkin seeds (pepitas)

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 cup pure maple syrup

1/4 cup coconut oil, melted (or any neutral oil)

1 teaspoon vanilla extract

1/2 cup dried fruits (raisins, cranberries, or apricots), chopped

Optional: 1/4 cup chia seeds or flaxseeds for added nutrition

Preheat the Oven: Preheat your oven to 300°F (150°C) and line a large baking sheet with parchment paper for easy cleanup.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, chopped nuts, shredded coconut, pumpkin seeds, salt, cinnamon, and chia or flaxseeds if using. Stir until everything is evenly distributed.

      Prepare Wet Ingredients: In a separate bowl, whisk together the maple syrup, melted coconut oil, and vanilla extract until well combined.

        Combine and Coat: Pour the wet mixture over the dry ingredients. Stir well to ensure all the oats and nuts are coated with the maple syrup mixture. This will help them caramelize while baking.

          Spread on Baking Sheet: Transfer the granola mixture onto the prepared baking sheet. Spread it out in an even layer, making sure not to overcrowd the pan (this allows it to crisp up nicely).

            Bake: Place the baking sheet in the preheated oven. Bake for 25-30 minutes, stirring halfway through to promote even baking. Keep an eye on it to prevent burning, particularly around the edges.

              Cool: Once golden brown and fragrant, remove the granola from the oven and let it cool completely on the baking sheet. This cooling process will allow the granola to become crunchy.

                  Store: Transfer the granola to an airtight container. It keeps well for up to two weeks, but you’ll probably finish it sooner because it’s so delicious!
