Ingredients

1 cup cornmeal

1 cup all-purpose flour

1/4 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 cup buttermilk (or regular milk with 1 tbsp vinegar)

1/2 cup unsalted butter, melted

2 large eggs

1/4 cup honey

1 teaspoon vanilla extract

Optional: 1 cup corn kernels (fresh or frozen)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Grease a 9-inch square baking pan or cast iron skillet with butter.

Mix Dry Ingredients: In a large bowl, whisk together the cornmeal, all-purpose flour, sugar, baking powder, and salt until well blended.

Combine Wet Ingredients: In a separate bowl, whisk together the buttermilk, melted butter, eggs, honey, and vanilla extract until smooth.

Combine Mixtures: Gradually add the wet mixture to the dry ingredients, stirring gently until just combined. Be careful not to overmix; a few lumps are okay. If using corn kernels, fold them in at this stage.

Pour and Bake: Pour the batter into the prepared baking pan or skillet, spreading it evenly. Bake for 20-25 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean.

Make Honey Butter: While the cornbread is baking, make the honey butter. In a small bowl, combine 1/2 cup softened butter and 1/4 cup honey. Whip together until creamy and smooth.

Cool and Serve: Once the cornbread is baked, remove it from the oven and let it cool in the pan for about 10 minutes. Cut into squares and serve warm with the honey butter on the side.
