2 lbs boneless, skinless chicken thighs

1 cup pineapple chunks (fresh or canned, drained)

1/2 cup low-sodium soy sauce

1/4 cup brown sugar

1/4 cup honey

1/4 cup ketchup

2 cloves garlic, minced

1 tablespoon grated ginger

1 teaspoon sesame oil

1/2 teaspoon red pepper flakes (optional, for a bit of heat)

1 bell pepper, sliced (red, yellow, or green)

1 medium onion, chopped

1/4 cup green onions, chopped (for garnish)

Instructions
 

Prepare the Chicken: Place the chicken thighs at the bottom of the crockpot. Make sure they’re evenly spaced.
