1 cup rolled oats

1/2 cup almond butter (or any nut butter of your choice)

1/4 cup honey or maple syrup

1/4 cup chia seeds

1/3 cup unsweetened cocoa powder

1/2 teaspoon vanilla extract

1/4 teaspoon salt

1/4 cup dark chocolate chips (optional)

1/4 cup chopped nuts (e.g., almonds or walnuts, optional)

Instructions
 

Mix Dry Ingredients: In a large bowl, combine the rolled oats, chia seeds, cocoa powder, and salt. Stir them together until evenly mixed.

    Blend Wet Ingredients: In a separate bowl, whisk together the almond butter, honey (or maple syrup), and vanilla extract until smooth and well combined.

      Combine Mixtures: Pour the wet mixture over the dry ingredients. Stir with a spatula or your hands until everything is combined. The mixture should be thick and sticky. If using, fold in the dark chocolate chips and chopped nuts at this stage.

        Prepare Pan: Line a square baking dish (approximately 8x8 inches) with parchment paper, leaving some overhang on the sides for easy lifting later.

          Press Mixture into Pan: Transfer the energy bar mixture into the prepared baking dish. Use a spatula or your hands to press it down firmly and evenly into the pan.

            Chill: Place the baking dish in the refrigerator for at least 2 hours to allow the bars to firm up.

              Cut and Serve: Once chilled, lift the mixture out of the pan using the parchment paper overhang. Cut into squares or rectangles, depending on your preferred size.

                Store: Keep the energy bars in an airtight container in the refrigerator for up to one week or freeze for longer storage.
