Sweet and Sour Meatballs

1 lb ground beef (or ground turkey for a lighter option)

1/2 cup breadcrumbs (preferably panko for extra crunch)

1/4 cup grated Parmesan cheese

1/4 cup minced onion

2 cloves garlic, minced

1 large egg

1 tsp Italian seasoning

1/2 tsp salt

1/4 tsp black pepper

1 tbsp fresh parsley, chopped (optional)

For the Sweet and Sour Sauce:

1 cup pineapple juice

1/2 cup ketchup

1/4 cup apple cider vinegar

1/4 cup brown sugar

1 tbsp soy sauce

1 tsp cornstarch mixed with 1 tbsp water (for thickening)

1/2 cup bell peppers, diced (red and green for color)

1/2 cup onion, diced

Instructions
 

Prepare the Meatballs:

    - In a large mixing bowl, combine ground beef, breadcrumbs, Parmesan cheese, minced onion, garlic, egg, Italian seasoning, salt, pepper, and parsley.

      - Mix thoroughly until all ingredients are well combined.

        - Roll the mixture into 1-inch meatballs and set aside on a baking sheet.

          Cook the Meatballs:

            - Preheat oven to 400°F (200°C).

              - Bake the meatballs for 20-25 minutes, or until browned and cooked through. Alternatively, you can pan-fry them in a skillet over medium heat until browned on all sides.

                Make the Sweet and Sour Sauce:

                  - In a medium saucepan, combine pineapple juice, ketchup, apple cider vinegar, brown sugar, and soy sauce. Stir well and bring to a simmer over medium heat.

                    - Once simmering, add diced bell peppers and onion. Cook for about 5-7 minutes until the veggies are tender.

                      - Stir in the cornstarch mixture to thicken the sauce. Continue to cook for another 2-3 minutes until the sauce has thickened to your desired consistency.
