Sweet and Sour Chicken Skewers

For the Chicken Marinade:

1 lb boneless, skinless chicken breast, cut into 1-inch cubes

1/4 cup soy sauce

2 tablespoons honey

2 tablespoons rice vinegar

1 teaspoon garlic powder

1 teaspoon ginger powder

Salt and pepper to taste

For the Sweet and Sour Sauce:

1/2 cup pineapple juice

1/4 cup brown sugar

1/4 cup rice vinegar

2 tablespoons ketchup

1 tablespoon soy sauce

1 teaspoon cornstarch mixed with 1 tablespoon water (for thickening)

For the Skewers:

1 red bell pepper, cut into 1-inch squares

1 green bell pepper, cut into 1-inch squares

1 red onion, cut into wedges

1 cup pineapple chunks (fresh or canned, drained if using canned)

Wooden or metal skewers (if using wooden, soak in water for 30 minutes prior to grilling)

Instructions
 

Marinate the Chicken: In a bowl, combine the chicken pieces with soy sauce, honey, rice vinegar, garlic powder, ginger powder, and season with salt and pepper. Mix well, cover, and let marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).

    Prepare the Sweet and Sour Sauce: In a small saucepan over medium heat, combine the pineapple juice, brown sugar, rice vinegar, ketchup, and soy sauce. Stir until the sugar dissolves. Then, bring to a simmer. Add the cornstarch mixture and whisk until the sauce thickens, about 2-3 minutes. Remove from heat and set aside.

      Assemble the Skewers: Preheat your grill or grill pan to medium heat. Thread the marinated chicken, red and green bell peppers, red onion, and pineapple chunks onto the skewers, alternating between chicken and vegetables.

        Grill the Skewers: Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally until the chicken is cooked through and has nice grill marks. Baste the skewers with the sweet and sour sauce during the last few minutes of grilling for extra flavor.

          Serve: Remove the skewers from the grill and let them rest for a few minutes. Drizzle the remaining sweet and sour sauce over the top and serve hot, garnished with fresh cilantro if desired.
