Ingredients

For the Carrot Fritters:

2 cups grated carrots (about 3 medium-sized carrots)

1/2 cup all-purpose flour (or gluten-free flour)

1/4 cup cornmeal

2 large eggs

1/4 cup finely chopped green onions

1/4 cup chopped fresh cilantro

1 tablespoon smoked paprika

1 teaspoon garlic powder

1 teaspoon cumin

Salt and pepper to taste

Olive oil for frying

For the Taco Assembly:

6 small corn or flour tortillas

1 avocado, sliced

1 cup shredded red cabbage

1/2 cup sour cream (or Greek yogurt)

Lime wedges, for serving

Additional cilantro, for garnish

Instructions

Prepare the Fritter Mixture:

    - In a large mixing bowl, combine the grated carrots, all-purpose flour, cornmeal, eggs, green onions, cilantro, smoked paprika, garlic powder, cumin, salt, and pepper. Mix until all ingredients are well-combined and a batter forms.

      Make the Fritters:

        - Heat a generous amount of olive oil in a frying pan over medium heat. Once hot, scoop about 2 tablespoons of the fritter mixture into the pan, flattening them slightly with the back of a spatula. Fry in batches, being careful not to overcrowd the pan.

          - Cook for about 3-4 minutes on each side, or until golden and crisp. Adjust the heat as necessary to prevent burning. Transfer cooked fritters to a paper towel-lined plate to drain excess oil.

            Warm the Tortillas:

              - While the fritters are frying, warm the tortillas in a separate pan or microwave until soft and pliable.

                Assemble the Tacos:

                  - On each tortilla, place a couple of carrot fritters. Top them with shredded red cabbage, a few slices of avocado, and a dollop of sour cream. Sprinkle some fresh cilantro on top for extra flavor.

                    Serve:

                      - Squeeze fresh lime juice over the tacos before serving for a bright finish. Enjoy your Sweet and Smoky Carrot Fritter Tacos!
