Ingredients

For the crust:

1 ½ cups all-purpose flour

½ cup granulated sugar

2 tsp baking powder

½ tsp salt

½ cup unsalted butter, softened

1 large egg

½ tsp vanilla extract

1-2 tbsp milk (if needed)

For the cream cheese frosting:

8 oz cream cheese, softened

½ cup powdered sugar

1 tsp vanilla extract

1 tbsp lemon juice

For the fruit topping:

1 cup strawberries, sliced

1 cup kiwi, peeled and sliced

1 cup blueberries

1 cup mango, diced

1 cup peaches, sliced

Fresh mint leaves for garnish (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line a pizza stone or baking sheet with parchment paper.

Make the Dough: In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt. Add the softened butter and mix until crumbly. Then, beat in the egg and vanilla extract until a soft dough forms. If the dough is too dry, add milk one tablespoon at a time.

Shape the Pizza Crust: Transfer the dough to the prepared pizza stone or baking sheet. With floured hands, spread the dough out to form a circular pizza shape, about ½ inch thick. Bake in the preheated oven for 12-15 minutes or until golden brown. Allow the crust to cool completely on a wire rack.

Prepare the Cream Cheese Frosting: While the crust is cooling, in a medium mixing bowl, beat together the softened cream cheese, powdered sugar, vanilla extract, and lemon juice until smooth and creamy. Adjust the sweetness to your taste.

Assemble the Pizza: Once the crust is completely cooled, spread the cream cheese frosting evenly over the top. Arrange the sliced strawberries, kiwi, blueberries, diced mango, and sliced peaches artistically on top of the frosting.

Garnish and Serve: If desired, garnish with fresh mint leaves for a pop of color and added flavor. Slice the pizza into wedges and serve immediately.

Enjoy Your Summer Delight: This vibrant and refreshing summer fruit pizza is perfect for picnics, barbecues, or as a sweet celebration treat!
