Stuffed Tomato Burrata Salad Cups

4 large ripe tomatoes (preferably heirloom)

8 oz burrata cheese

1 cup fresh arugula, roughly chopped

1/2 cup cherry tomatoes, diced

1/4 cup red onion, finely chopped

1 tablespoon balsamic glaze

2 tablespoons extra-virgin olive oil

Salt and freshly ground black pepper, to taste

Fresh basil leaves, for garnish

Prepare the Tomatoes: Start by carefully cutting the tops off each large tomato and gently scooping out the insides with a spoon, creating hollow cups. Set the insides aside in a bowl—this will be used in the stuffing.

    Make the Filling: In the bowl with the scooped tomato insides, add the diced cherry tomatoes, chopped arugula, and red onion. Drizzle with olive oil and balsamic glaze, then season with salt and pepper to taste. Mix everything thoroughly until well combined.

      Assemble the Cups: Place the hollowed-out tomatoes upright on a serving platter. Spoon the filling mixture into each tomato until they are generously stuffed.
