Stuffed Bell Peppers with Sausage and Rice

4 large bell peppers (any color)

1 pound Italian sausage (mild or spicy, based on preference)

1 cup cooked rice (white or brown)

1 small onion, diced

2 cloves garlic, minced

1 can (14.5 oz) diced tomatoes (with juices)

1 teaspoon dried oregano

1 teaspoon dried basil

½ teaspoon red pepper flakes (optional)

Salt and pepper to taste

1 cup shredded mozzarella cheese (plus more for topping)

Fresh parsley or basil for garnish

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Bell Peppers: Slice the tops off the bell peppers and remove the seeds. If necessary, trim the bottom so they can stand upright (be careful not to cut a hole through). Place them in a baking dish, cut side up. You can blanch them in boiling water for 3-4 minutes for a softer texture, but this step is optional.

      Cook the Sausage: In a large skillet over medium heat, crumble and cook the Italian sausage until browned, about 5-7 minutes. Add the diced onion and minced garlic, sautéing until the onion becomes translucent (about 3 minutes).

        Mix the Filling: To the skillet, add the cooked rice, diced tomatoes (with juices), oregano, basil, red pepper flakes, salt, and pepper. Stir everything together until well combined and heated through. Remove from heat and gently fold in the mozzarella cheese.

          Stuff the Peppers: Carefully fill each bell pepper with the sausage and rice mixture, packing it in gently. Top each stuffed pepper with an extra sprinkle of mozzarella cheese.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes or until the cheese is bubbly and golden.

              Garnish and Serve: Remove from the oven, let cool for a few minutes, then garnish with fresh parsley or basil before serving.
